From what I remember, the beaver saddle is best, all you need is a beaver. You know that all saddles have stats, just pick the one with the highest numbers. I just bought the upland saddle and it is actually insane. The price tag is also insane though. It's a little over $600 but it is absolutely amazing.

The white Arabian is useless because your constantly brushing it and it's not super rare or anything and Dutch already has a similar horse. I mean it's free after chapter 3 and will respawn when you lose yours or sell it. I prefer the tiger strip mustang over the Arabian or even the brindle thoroughbred is more fun.
